It can be, although that upsets the cadence when you say it.

The phrase also works with pheasant rather than pedant, and at least you then know what is being plucked, but that's nitpicking.

Oh, that would never do; nits are constantly picked on, though they have a right to a quiet life. I wonder what their purpose is - anyone know?

The original is definitely 'pheasant', but I suspect somebody adjusted it, to wind up some nit-pluckers on here.
