Need to change the 2 rear tyres, and have read that you can put 275 30 19 Goodyear F1's on.
Has anyone done this?

Yes, they have. Conaero and MAF have put Goodyear F1 Assymetric 2s and and they really rate them. As do I on my 18s.

I think OP is referring to putting 275 rather than 295? Or has it been that long since i looked at my car to remember the correct tyre size!?

In that case I apologise; I thought it was the tyre make rather than the tyre size he was wondering about.

Yes you're right.
Tyre size.
They should run 265's, but I saw somewhere that you can put 275's on which makes them more pothole friendly. But when I asked for them they quoted they only put those on mercedes!!!! Strange.

You can I believe - someone has done it http://www.maseratilife.com/forums/modern-maserati/3886-wider-tires-oem-gs-2.html

It will almost certainly need you to inform your insurance.

The difference in sidewall height is 6.6mm - the car would ride higher at the rear and there might be a bit of an improvement in the ride but the jury is still out on this. It's all in the eye of the beholder I imagine.

As for potholes - I had one of my wheels straightened when I got the car the others were fine and they still are - after driving through Rome (the city of potholes) following Modena last year. Some have had issues but I haven't. I would question if an extra sliver of rubber would save you from a wheel wrecking hole anyway.

Would the ride height not be lower with the 30 rather than the standard which is 35?

Standard tyres are 265/30/19 - if you go to 275 you would need to stick with the 30 aspect ratio or it would really go to pot. They are 35 aspect on the fronts.

Yes I agree with sticking to the 30 aspect, but would this mean with the 275's fitted it would ride higher? Seemed to me that it should ride the same. The last thing I want to do is lift the rear of the car.

The aspect ratio of a tyre is not an absolute measurement. It is the height of the sidewall expressed as a percentage of the width. So any increase in width increases the diameter and the rolling circumference. If the diameter was the same then it wouldn't be any better with potholes than the standard... You pay your money :)

Yes your right Zep, now I understand. I will put the standards on. May consider lowering a bit as I saw one which was lowered and the stance was much better. They do seem to sit a bit high on the standard setting. Maybe just 10mm.

I thought about the bigger tyres and made the same choice as you. The spring platforms are adjustable, if you find the right garage you could probably drop 10mm without any mods...

The most important thing is to enjoy your car - it's awesome!
