Well, in a sense, I think the Irish don't think of potatoes as vegetables, but as just potatoes. In a sort of 'meat and two veg, plus potatoes' sort of way.

I ordered a cottage pie in a Tipperary cafe and it came with boiled potatoes and chips on the plate, and then they brought a dish of carrots and beans separately.

Standard fare here, chips boiled and roasties on the same plate not unusual

Back in the late 90's, an American style restaurant outside Lincoln, can't remember their name, used to do free main courses if it was your birthday including sides.

So obviously I had the fillet steak, with a jacket potato (with coleslaw) and peas with a side order of chips, onion rings and beans.

I finished off with Chocolate fudge cake, slightly warmed with a scoop of ice cream. Can't remember the starter that I had. Needless to say, I had to loosen my belt buckle a bit...
