The problem is, being called out as a racist is seen as some horrific insult, but if you are using racial terms or singling out people due to their race, you re being racist.
For absolute clarity, this is the definition of racist:
"prejudiced against or antagonistic towards a person or people on the basis of their membership of a particular racial or ethnic group, typically one that is a minority or marginalized"
The great news is, you can change. All you have to do is think about what you are saying. Am I being prejudiced against people due to their racial group?
If you are in doubt, just don't talk about race, it's that simple.
If you get a term wrong and someone corrects you, apologise, and try not to use it again. I'm not persecuting anyone for using the wrong term, nor am I permanently branding someone, I'm simply pointing out what shouldn't be said. We all have a responsibility to make this world a nice and friendly place, I don't think it's much to ask.
I will persecute people for choosing to ignore however as they think that they can continue to use these racial slurs, which indicates to me that they think they are somehow better then the oppressed race, which indicates to me that they are being prejudiced against people based on their race, which is, as posted above, exactly the definition of racism.
Anyway, at this point, I've tried to do my bit and educate folk a little, and I'm pulling out of this one. I don't feel like I've won anything (in fact it seem clear I haven't) but my words are falling on deaf ears so I'll go spend my time elsewhere.

I must say though, in your first sentence, someone calling you a racist is actually horrific, when you are not racist, because you may have inadvertently used the wrong, currently not allowed this week, words.
