Mine runs around 80. I've been told by Maserati that under 90 in fine. Hotter than that is a problem.
This assumes that the gauge is accurate of course but 90-95 I would say is fine
70° is far too low, the thermostat must be stuck fully open.
The engine should run close to 90° at all times regardless of speed your traveling.
Also I am pretty sure the oil pressure sensor is dead as the pressure is always on full and it used to drop down slightly on idle once the engine got up to temperature
They are a notoriously weak point with a short shelf life, and are also quite hard to source new. They could soon become an obsolete OEM part I fear
Contact Zep. He has an adapter and a replacement cheap part. It also makes future replacement much easier.

Very good to know! Another bookmark for the expanding folder.
Really? Mine seems to run cooler in "free air" temp drop to 75/80 and then 90 in traffic.
My 4200 was a guinea pig. It took a couple of hours to it, but had no problems in the rest of my ownership. I assume Wack61 has had none either.

Yes, that is a symptom of a stuck open thermostat.
The thermostat should regulate the temp of the engine to around 88-90° it does this by opening only as required to allow coolant flow to the radiator.
At least you know the sender is good as it comes up to 90° in traffic.

This is an equivalent part, much cheaper and works. http://www.ebay.co.uk/itm/Oil-Pressure-10-bar-M18-X-1-5-WK-Sender-Unit-replaces-VDO-warning-contact-0-5-/391617486032
