I've kept a casual eye on this since buying my AC in 2012 and completely agree with your findings.
I watched 4 pretty well known sites over this time and found a rough rise from an average of 12.5k to 16k to today. Also taking in to account the odd exception.
The way I've looked at it is free tax and insurance each year so a nice added bonus to having a great car.
All in all it just enhances the enjoyment of owning it.

I have to agree that I think the main thing to define a collectable car is rarity. I would also add the attribute of a defining characteristic like the first car to introduce a breakthrough feature, or even a car that allegedly brought a marque back to prominence....

I do think the secret of how good these coupes are is getting out slowly, especially with a few good reviews of late, so if the demand for them grows so will the price as with anything. They're still relatively new cars in the classic world too so I wouldn't be expecting any surprises, that said I don't see any reason why the current trends won't continue.
