I will take a punt at Quebec. Massive gold producing region. Nimes sounds French not sure what the link would be. Im fairly sure there is a Quebec in Montana. I have no idea about the sourdough connection. So Quebec is all i can come up with.

Nimes in France produced a cotton cloth that was very hard wearing and we know it as denim (de Nimes)

Sourdough is popular with hipsters and cowboy, for gold must be a gold rush possibly in Montana so I'll say San Francisco... For the Chinese rail workers

Morning SPK. Not Quebec I'm afraid - where gold was discovered earlier than the region this specifuc "place" is situated. Correct, Nîmes is in France and is associated with a product typically North American. This is a sport question which may help with the other two clues.

Correct, that Denim originated in Nîmes.
