Bound to be some expertise on here.

I need a new boning (steady, matron) knife as I have broken the tip (here we go) off mine. Anyone got a recommendation for a thinnish, pretty flexible knife with a blade around 18cm and priced around the £30-60 mark?

Have a look at Rapala / martini filleting knives really sharp & available I’m most decent fishing tackle shops.

I came her to say exactly that but roughly double the expected budget. I love my Globals but they are not easy to sharpen and the lack of a bolster forces you to adopt a more Japanese grip than may be comfortable for some. And when you get it wrong, it bites. Not a huge issue with a boning knife, I grant.

Victorinox are very well regarded amongst professionals (and Nisbets are a company I've dealt with forever)

I normally use Victorinox as my weapon of choice. Hold an edge pretty well, easy to sharpen and cheap to replace when the time comes. You can usually get a good deal Here at Butchers equipment.

Which is interesting, but of course accurate. The Globals should be for life (if you're not an idiot like me(1)) but the Victorinox are replaceable. And why not! They have many advantages over Globals (as an example)

(1) Yes I broke one of mine but that's not why I'm an idiot (2)
(2) I'm an idiot because having replaced the tile floor with a knife friendly wooden one, and replaced the broken knife I tried to catch the replacement........

I’ve got one of the wood handled Finnish/martini style blades & it’s razor sharp most tackle shops will stock them.

Mark have you tried Readers Knives classified section?

If you want something that's easy to sharpen then I suggest sacking off stainless and get a carbon steel knife instead.
