Never heard of a tyre fitter refusing to fit. Have you seen the state of 'stretch' look tyres, utterly ridiculous and dangerous, but they still get fitted.
I can maybe understand not wanting to order the wrong tyres for you, in case they got left with them.
Order what YOU want, you'll find somewhere local that'll fit them for you.

PS4 is the tyre of choice with most high performance cars that used to pop into the garage, we were heavily pushed to sell Pirellis as they simply did not sell well
