Went to Spain two weeks ago.
It was great. Had loads of fun.
Going back to Spain in the near future.
Also got a long weekend, short driving trip, to France (Honfleur) planned.
My view is that if you are nervous or worried, don't go.
If you're really keen to go, then go with a positive attitude.
Also, when you do go, no one is forcing you to do anything, so if you don't want to go tor the beach. Don't. If you're worried about bars, don't go to them. Do whatever makes you feel comfortable.
I had quite a normal trip and had an absolute blast. Went to restaurants, bars etc. For us, it had very little impact.
Attitude is the major stumbling block.
As for prices, there's more availability currently, but prices are the same. I don't begrudge them that, they've had 4 months without business.
Compare that to the UK, where self catering holiday cottages, theyve put their prices up!
Nothing booked as yet... seems like hotels are holding out at full costs for as long as possible... but any holiday is certainly not going to be as good as it was pre Covid.
I think you'd need to accept its going to be different, and be happy with that. If you cannot, and you're sounding a little negative, then I'd advise you not to go.
Also, like booking anything, prices will either drop or go up as you near your departure, if you want to play that game you can, and you might get a good deal. You also might miss out. There's no COVID discount.
