I'd get the wheels powder coated in the OEM colour then apply the decals before a final clearcoat.
Yes, the Centennial wheels are awkward because of the trident "flashes" on each spoke. Sorry, don't have any recommendations but I assume you would have to get them refurbed using the normal method for painted wheels and then get the trident "flashes" hand finished?
I've used Shiply too for several cars without issue. Also, used local places and no issues at all. It's not rocket science transporting a car... don't overthink it! While the GT and GC are long they are not particularly low at the front.

Anthony James are a very well regarded dealer. I haven't bought a car from them but spoken to them on several occasions. To suggest they are "trying to pull a fast one" couldn't be further from the mark!
