2004 bought a 1989 Atlas Grey Golf 2 GT 16v with 160k miles on the clock for the princely sum of £450. It had a full service history and loads of receipts. Once I dived into them, I found a proper VW invoice for an new engine fitted 60k miles ago,. Result! Also, not a spot of rust on it. Had some terrible 17" wheels, which were promptly sold via eBay for £250, and then a set of 15" with new Kumhos was acquired for £50 on the same day. Thus I had a 16v GTI for a net outlay of £250 with a years MOT. Kept the car for 4yrs as a spare and occasional Ring tool. Spent about £2k on suspension, brakes, and sprucing it up. Did 180 laps of the Ring. Sold it for £2.5k to an enthusiast who then returned it to standard and fully restored it. Probably worth £10k + now...

Bought a Ford Fiesta 1.1 in 2007 to drive to the train station in, somewhere during autumn for the princely sum of 180 euro.
Had to sell it again during spring as I didn't want to drive it when there was actual sunlight, as it's red paint was more of a matte pink and the embarrassment would just be too much. Also, it was incredibly slow, a bit smelly and ever so slightly rusty. Recovered most of my 'investment'.

Another one is the Renault 4 fourgonnette (the van version for those of us that aren't Phil) for 250 euro. On the way home, the exhaust fell off, as apparently it had already broken before. There was some tinfoil covering the opening and it appeared to have been mounted using some wires. luckily the replacement wasn't very expensive. I never drove it after as the smell of the police dogs it once transported was still very very much present.

And then there is this gransport spyder... Ooooh, sorry, that probably doesn't quite fit the requirements of this thread o_O

Looks like you had quite the adventure with those budget purchases! It is commendable that you were able to recover most of your investment despite unforeseen problems. And as for the Gransport Spider, well, maybe a story for another time!
